The Counter Opens
The room is being finished. The street address and the opening day land on this page first.
Small batch beans, iced classics and cheesecakes worth the walk. Pulled fresh, poured slow.

Classics done properly, from cortado to flat white.

Slow steeped cold brew and iced lattes all day.

Cheesecakes, magnolias, brownies and croissants.
Three things we are working on right now. Each one is announced here before anywhere else.

A small table, a few coffees side by side. Dates and the coffee list are posted under Tastings.
Single origins rotate with the harvest. When a lot is good enough to bag, you will read it here.
Coffee is an agricultural product before it is a drink. Altitude, soil and the way the cherry is dried decide most of what you taste — the roast only reveals it. These are the origins the specialty world keeps coming back to, and the ones we buy from when the harvest is right.
The birthplace of coffee. Heirloom varieties grown in forest gardens give a tea-like cup that tastes closer to perfume than to coffee.
Volcanic soil and a rigorous double soak wash build the sharpest acidity in the coffee world. Bold enough to drink black all day.
The dependable classic. Two harvests a year and mountain shade produce a balanced, sweet cup that never fights the milk.
The most celebrated lot at auction year after year. Delicate, floral and priced like wine — we pour it as a limited guest brew.
Grown between three volcanoes, in soil that holds heat and moisture. Rich body that carries espresso beautifully.
Honey processing leaves fruit mucilage on the bean while it dries, adding syrupy sweetness without losing clarity.
The backbone of our espresso blend. Sun dried in whole cherry for a low acid, nutty sweetness that stands up to milk.
Wet hulling in a humid climate gives the heaviest body of any origin — syrupy, savoury and unmistakable.
Grown in cool mist above Kingston and famously scarce. Gentle rather than loud — the cup people call smooth.
Coffee has been terraced on these mountains for five centuries. Wild, winey and the closest thing to drinking history.
Brew Your Freedom

Single origins rotate with the harvest calendar. Ask the bar what is open today — there is always a cup to taste.
Three chocolates. One statement.
We spent months on one question.
Each layer is a different chocolate.
Baked in small trays.
Best with filter coffee.

Right now we are drinking a frankly unreasonable amount of coffee, taking notes, arguing about them, and drinking it again. Research, we call it.
The point is simple: we would rather do the hard part, so that the cup in front of you is already the right one. When a lot passes the test, we open the doors for an evening — a small table, a few coffees side by side, no ceremony, no jargon.
Leave us your name and we will write to you before the first table fills. It will fill.
Dates and price announced here first.
Statue Coffee grew out of years spent behind counters and beside roasters — learning which details a guest can taste and which corners can never be cut. That experience is the whole recipe: good beans, clean water, steady hands and service that treats every cup as the only one.
The name comes from the Statue of Liberty. She stands for the freedom to arrive, to begin again, to stand tall wherever you are — and we raise a cup instead of a torch. That is what we mean by Brew Your Freedom.
We started in Istanbul, and we are not planning to stop there. Wherever the counter goes next, the standard travels with it: small batches, honest prices, the same welcome. Until then — see you across the world, one cup at a time.
